Who knew we could all bake so much?

My social media feed has gone from various memes of silly behaviour and random family updates with the odd video of dishes that have melted cheese and bacon… to a stream of cinnamon buns, cookies, sourdough, cakes, doughnuts… well, and then about 4 pm it’s virtual happy hour but that’s another story altogether. Who knew so many people liked to bake things from scratch?

I know many of us are getting tired of being cooped up at home, not able to go out for coffee or go to the gym. The routines for most people of being at school or work most days have evaporated. It was a fun holiday for the first few days, but now that our bottoms are numb from days of binge-watching all of Netflix and Disney+, we feel like we need to accomplish something. Anything.

I wistfully pondered the concept of buying a Masterclass membership to follow Gordon Ramsay on his journey to teach me sauces, pasta making and all other manners of cooking a beautiful meal. But then the reality of keeping the money to pay the bills that will come while I’m still not using those skills to make any more money came crashing down around me. However, this is no time to wallow, we need to keep our spirits up. So, here’s a few fun baking friends I found out there who can help us stay positive. Perhaps I ought to have tempered these links with home workouts, so we don’t all end up looking like couch potatoes? Nah; for now I’ll stick with walking the dog more often.

Borough Market Bread Ahead Bakery in London rose to the occasion quickly (pun intended). They started hosting live cooking demos on Instagram, featuring many of the classic recipes from their Baking School cookbook. Very educational if you’re into bread products. The videos only stay up in IG Stories for 24 hours but they are replaying them through April, and you can get the ingredients on their website. You can also buy a copy of their full book, or the e-book they created for these recipes.

If you have kids, you might want to look up the hashtag #KitchenBuddies . Jamie Oliver’s Buddy_Oliver Kitchen Buddiesson Buddy started doing IG videos as well, and together he and his dad are encouraging families to cook. Jamie has also done some posts offering recipes with what you have on hand, like pasta made in just a few minutes with only flour and water. I offer a link to his recipes online which is quite extensive.

If you want something more formal, I stumbled upon a resource through a site I’ve mentioned before that is rich with foodie info. The Kitchn’s Cooking School offers 20 lessons, starting with knife skills. They include links to recipes that help you practice what each lesson teaches, and different skill levels for you to choose. It dates back to 2014 but all the information is timeless.

Want something more decadent? How about something called Millionaire’s Shortbread ! I first had this in Scotland, and being a fan of Diana Gabaldon’s Outlander tales, I was overjoyed when it was included in the Outlander Kitchen batch of recipes (and what a good batch it is, too – I can vouch for many of them personally). This one takes a bit of time as one layer has to set, but we’ve got plenty of that these days, don’t we?

In case you’re put off by the pressure of having to cook more, already cooking all meals and not being able to eat out at the moment, well then how about a cocktail? David Lebovitz, our foodie friend in Paris, has just launched a cocktail book and to celebrate he;s been offering recipes as part of his virtual happy hour, live on Instagram. There is also information on his website.

However you are managing, I do hope you’re taking time to enjoy meals at home. Pull out those dishes and table linens that you never have time to find. Make hot chocolate from scratch for the kids. Have a nightcap if there is a bottle of something suitable in your liquor cupboard. When we get back to the crazy pace of what we called normal, we can look back on this and say, “Wasn’t it great when we had all that time to share?”

 

 

 

 

 

‘‘Twas the Night Before Christmas…

In our house, Christmas was a big deal.

Decorating the tree was a major undertaking, usually requiring a few days to get everything tight. (Yes, we were a “one strand of tinsel at a time” kind of family.) Gifts were all thoughtful, and their wrapping was to be done with care. Everything was meant to be savoured.

Christmas Eve was inevitably busy, with last minute gifts to wrap amidst visiting friends. But once dinner was done, we settled in. Final preparations were near.

Every year of my childhood we read Clement C. Moore’s classic, once the cookies were set out for Santa.

Santa had to get a sample of each of the baked goods we’d made that year. I remember my mom explaining he probably wouldn’t have room to try them all, having to see everyone around the world.

I used to be able to recite all the verses… my favourite was

My mom usually read the story, but one year we were lucky enough to have Gramps there – he knew The Man in Red personally, so that was extra cool.

As soon as the story was finished, my brother and I would kiss our parents good night, and then it was off to bed to await the magic. I don’t remember dreams of sugar plums but I did sleep well.

I still get up in the morning to check and see what Santa sampled.

I hope there is magic in your heart too – you do know that Santa checks in anyway, even if you don’t put out cookies, right?

You could fry an egg on the sidewalk!

We are in the midst of a heat wave. It’s not unusual for where I live at this time of year; the Okanagan is the northernmost tip of the Sonoran desert that runs through much of North America. It is a summer vacation destination, so many people are on holiday and don’t worry too much about being hot. For those of us working though, it’s tricky when the outdoor temperature is at or above body temperature. I bet you really could fry an egg.

Thankfully we have Okanagan Lake and a few other lakes along the length of the valley. They allow for moderate temperatures much of the year, but there is always a week or so that makes the mercury boil. I work mostly outside in the summer, long hours, but I vow not to complain because I am someone who dislikes cold much more than heat. I am thankful I don’t work in the snow and ice, and I am in a happy environment sharing in people’s celebrations. It could be worse. If sweating a little (okay, some days more than a little) is the price I pay, so be it.

It is especially delicious when we get to cool off. Some days we get down to the lake with the dogs and all of us go for a swim. Other days, it’s a soak in the tub, maybe even with a cocktail if we finish work early enough. At the very least, we can wander down the road for an ice cream cone at our local favourite, Paynter’s Fruit Market.

When I was a kid, it was easy to beat the heat. You gathered a few friends and someone turned on the sprinkler. Ta da! Instant fun. Or you listened for the ice cream truck – it was bound to come by sooner or later. Then you could critique your friends’ choices (“ice cream sandwiches are better than fudgsicles, for sure!”), and decided whose tongue turned the best colour.

I don’t hear an ice cream truck anymore, and kids seem to play at municipal water parks instead of in back yards. As long as they find some way to have honest-to-goodness fun, what does it matter? A little bit of creativity is all it takes.

I am reminded of a podcast I heard one hot summer day years ago, by the late great Stuart McLean. It made me think of a summer with my cousins when we had an epic water fight. In case you are in need of inspiration on a hot summer day, here it is:

With that said, I am going to close now, and see if perhaps the dogs want to frolic a bit in the shade with the hose. The sweat is dripping down my nose as I write this, sitting even in the shade…

Being a Good Steward of the Earth

Ah, Spring! Blossoms abound, and the buzzing of bees and twittering of birds are hard to ignore. It is a time when most of us feel happily connected to the earth. The days are getting longer and the landscape gets greener. Really, what’s not to like? But are we truly connected to the planet? Do we understand what helps keep the planet healthy? Perhaps it’s a good idea that we have Earth Day on April 22 to remind us to be responsible planetary citizens.

Did you know that Earth Day has been around since 1970? A U.S.  senator first launched the idea – he wanted to bring attention to the environment after seeing the effects of an oil spill in California. He capitalized on the enthusiasm of student protests from the late 1960’s, and organized a group to promote events across the nation. There were 20 million Americans in the streets on April 22nd that first year in support of a healthy, sustainable planet. In 1990 the program was taken to the world, and Canada was one of the nations to adopt it. Almost thirty years later we are still working to maintain our environment.

Natural food has always been at the heart of the environmental movement, not just because of nutrition and eating seasonally and locally but also now with the affects of chemicals on animals, soil and air. Talk of bees and other pollinating creatures being at risk due to changes in our environment add another layer of danger to our natural world.

Can I plant enough wildflowers to help the bees win their battle? Can I convince enough children that they can make a difference if they eat a fresh apple instead of processed applesauce made across the world, or have homemade salad dressing instead of something in a bottle with added preservatives and sugar?

I spend time with kids in my volunteer work, both through Girl Guides and the Farm to Fork education programs in which I take part. Kids are aware of being responsible about recycling and not wasting energy, but they are also used to consuming processed packaged food and using all kinds of products to make life easier.

Products and packaging end up in the earth through landfills or sewers, despite the bits that gets recycled. Sometimes I wonder if we haven’t just adapted through technology – we have more ways to be earth-conscious, but we consume more stuff so we just recycle more. I am grateful for the sincerity and enthusiasm the kids have. It gives me hope to see their passion for our planet; they want to make it a better place.

Is Earth Day one you will mark on your calendar? Do you feel you make an effort towards having a sustainable planet? I remember 1990 – I was in the bicycle business back then, and the shop I managed was very keen to promote cycling as a clean mode of transport. I met a guy named Dave who became a guru for many of us at the shop. He was trying to live a pure life, he said, getting in touch with Nature. He wore hemp clothing, and was a vegetarian.

The most striking thing about Dave was the aura of peace he had. He wanted to be your friend, to hear what you were about. He thought if we could all just slow down and take the time to hear each other’s stories that perhaps we could find common ground where we could live in harmony. We called him Dave Zen.

A few years later I left the bike business and Calgary and I lost touch with Dave Zen. I have often wondered over the years what became of him. I imagine him in a community somewhere, a sort of co-operative where people have found the secret to a long and happy life. When I spend time with the kids, sometimes I see the same glimmer in their eyes that I saw in his, and that makes me smile.

So, in honour of Earth Day, my recipe this week is one from Dave. It may look overly healthy and you might be suspicious as a result, but trust me, Dave Zen Orbit Oatmeal Cookies are truly awesome. They taste the best when you eat them outside in the fresh air 🙂

Taking a Wellness Day

You know those days when you just feel like your get up and go got up and went? Today was like that for me. 

I got up this morning early  to a dark sky.  We were out of yogurt, my best morning energy boost. Ella and I walked in the rain, muck up to our ankles and clouds around our ears. Even the tulips were on strike. 


As the day wore on, I just seemed to get colder even though I was inside. (It was supposed to be a day working on garden projects but pouring rain doesn’t make for good digging weather.) I needed to focus on my wellness, as it was suffering 

 I decided about mid-afternoon that my best chance for a pick-me-up lay in the remainder of the Chocolate Pudding Cake on the counter. I set my sights on dessert to heal my spirit. (Not the most healthy option, I’ll admit; but sometimes instant gratification offers the energy for the next step.)


Thankfully, Wednesdays have a built-in bonus for me – it’s the night I volunteer with Girl Guides. Our Sparks troop, a wonderfully rambunctious bunch of 5 and 6 year olds, is the best remedy for low energy or feeling down.  After a very bouncy Easter egg hunt, ribbon dancing and a parachute game, they all went home smiling, and just a bit more tired.  I felt much better. 

Now that I’ve had my tea and dessert, I feel prepared to tackle the world again tomorrow. I’m so thankful I got a chance to soak in some positive energy today (and a bit of chocolate).
